Ingredients

- QuinoaChenopodium quinoa0.5 cupOrganic preferred, or other gluten-free grains like buckwheat or millet
- Filtered Water for Soaking1.5 cupsRoom temperature, chlorine-free water preferred
- Filtered Water for Fermentation2 cupsRoom temperature, chlorine can inhibit fermentation
Instructions
Rinse and Soak
Thoroughly rinse the quinoa and soak it in filtered water for 8-12 hours or overnight. Use a 1:3 ratio of grain to water.
Drain and Rinse
Drain the soaking water and rinse the grains thoroughly with fresh filtered water.
Sprout
Place the rinsed grains in a sprouting jar or container with a mesh lid. Keep at room temperature, rinsing 2-3 times daily until tiny sprouts appear (usually 1-2 days).
Ferment
Place the sprouted grains in a clean glass jar and add 2 cups of filtered water. Cover with a clean cloth or mesh lid and let ferment at room temperature for 24-48 hours.
Strain and Store
Strain the liquid into a clean glass bottle. This is your first batch of Rejuvelac. Store in the refrigerator for up to a week.
Notes
The taste should be lemony and slightly fizzy. If it tastes unpleasant or has an off smell, discard and start fresh. You can reuse the sprouted grains for a second batch, though it will be slightly weaker. Always use clean equipment to prevent unwanted bacteria growth.
Dosage
Start with a small amount (2-4 oz) and gradually increase to 8-16 oz per day. Best consumed on an empty stomach.
